Made from wild red agave descended from Mexico over 300 years ago, cultivated in ancient seabed soils of South Africa. Agaves are slowly steamed in converted dairy tanks, with the juice then hand-pressed and fermented using wild yeasts grown amongst the agaves. The result is an incredibly complex spirit, both velvety in character and truly versatile in cocktail serves. On the spirit you will taste fresh orange peel, cinnamon, liquorice and coffee, with soft notes of butter, caramel and cocoa, with a long saline finish derived from the ancient sea beds in which these agave grow.

SERVING SUGGESTION
Neat: Room temperature or slightly chilled, elevated with coarse salt, orange peel, and black pepper rim.

Simple Serve: Inzalo + tonic, garnished with basil and salted orange Classic Cocktails: Margarita, Paloma, highballs.

Craft and origin
  • Region
    Cultivated in a remote valley in the Western Cape of South Africa, where agaves descended from Mexican stock have adapted over more than 300 years to ancient seabed soils and intense sun.
  • Agave
    100% wild red agave — hand-harvested at full maturity. The distinctive red tips are shaped by the mineral-rich terrain and high-UV climate the plant has come to call home.
  • Production
    Slow-cooked at low temperatures to preserve the agave's natural sweetness. Fermented with wild yeasts — no commercial strains — which gives Inzalo its signature creaminess and depth. Distilled to 43% ABV. Additive-free: no sugars, no colourants, no flavouring. Just agave and time.
  • Batch One
    Limited to 5,000 bottles. Every bottle is numbered. Each batch reflects its season's harvest, so no two releases are ever identical.

02 — the taste

A tasting profile

Nose

Caramelised sugar and warm cinnamon greet you first, followed by bright orange peel. Underneath, softer notes emerge — dark cocoa and a trace of roasted coffee.

Palate

Layers of sweet spice (star anise, cinnamon) open into ripe tropical fruit, mango, a hint of pineapple. Wild-yeast fermentation gives a soft, almost creamy mouthfeel, carrying subtle notes of butter, dark chocolate, and coffee.

Finish

Long and mineral. A distinct salinity, sea salt drawn from the ancient seabed soils, lingers alongside the sweet spice, inviting the next sip.
