The inaugural production of our French Oak Rested single barrel, utilising 100L newly refurbished medium toasted French Oak barrels. Similar to our approach with the Pinotage Barrel Rested, we use a two-fill approach, filling the barrel first with a high-strength 64% spirit and resting for three months, allowing for the extraction of a dark amber colour, marmalade and spice. We then refill the barrel with new 55% spirit and rest for a new 3 month period, using the lower strength alcohol to extract honey, sweet spice and provide a softening to the tannins extracted in the first resting. The two spirits of 64% and 55% are combined, creating a soft synergy of Christmas spice, honey and oak, with a long velvety and saline finish.

  • Region
    Cultivated in a remote valley in the Western Cape of South Africa, where agaves descended from Mexican stock have adapted over more than 300 years to ancient seabed soils and intense sun.
  • Agave
    100% wild red agave — hand-harvested at full maturity. The distinctive red tips are shaped by the mineral-rich terrain and high-UV climate the plant has come to call home.
  • Production
    To rest and enhance the spirit, we utilize a dual-fill barrel technique. The first fill is rested at higher ABV (64%) to extract oak character and flavor. The second fill at a lower ABV (55%) is rested to draw further complexity and soften the spirit profile. The two fills are blended in equal amounts and diluted to 43%.

A tasting profile

Nose

On the nose, you get warm Christmas marmalade, honey, and vanilla notes from the French oak, with the agave still clearly present underneath.

Palate

Smooth and warming with soft oak spice, honey, vanilla, and a gentle sweetness — more delicate in structure than the Pinotage, allowing the purity of the agave to shine through.

Finish

Intense and saline, with oak warmth sitting on the back of the tongue and a long, lingering finish.
