Similar to our approach with the Pinotage Barrel Rested, we use a two-fill approach, filling the barrel first with a high-strength 64% spirit and resting for three months, allowing for the extraction of a dark amber colour, marmalade and spice. We then refill the barrel with new 55% spirit and rest for a new 3 month period, using the lower strength alcohol to extract honey, sweet spice and provide a softening to the tannins extracted in the first resting.
